FOOD SCIENCE CANDY MAKING

Our Food Science team recently got together to make candy. As part of our curriculum, we must be able to identify the stages of boiling sugar from the thread stage thru the ball stages, crack stages and onto burnt sugar.
The consistency of candy (soft, chewy, hard) is determined by the water content of the sugar solution. As water is boiled off the resulting candy will be harder. Unlike water that always boils at 212 degrees Fahrenheit, sugar solution will boil at higher temperatures as the water content decreases. Therefore, temperature makes an accurate scale to determine water content and will let you know when to remove your candy from the heat.
We began by running the cold water test on the sugar through all stages, then made lollipops and "broken glass". Here are some pictures.
